Easy Halloumi Pasta with Rich Tomato Sauce
This easy Halloumi Pasta is a quick and delicious weeknight dinner that combines crispy fried halloumi slices with a rich, zesty tomato sauce. The combination of cherry tomatoes, sun-dried tomatoes, and roasted peppers gives this dish a vibrant and robust flavor. 300g (⅔ lb) spaghetti, cooked
1 block halloumi, sliced
2 tbsp olive oil
400g (14 oz) tin cherry tomatoes
5 sun-dried tomatoes, chopped
5 roasted peppers, sliced
Zest and juice of 1 lemon
2 tbsp cream
2 tbsp garlic and tomato seasoning
1 tbsp basil, chopped
1 tbsp parsley, chopped
Directions:
1. Fry halloumi in olive oil until golden. Set aside.
2. In the same pan, cook cherry tomatoes, garlic seasoning, sun-dried tomatoes, peppers, cream, lemon juice, and zest.
3. Combine sauce with cooked spaghetti, add basil and parsley, and top with halloumi.
