Halloumi and Butter Bean Bake
This versatile vegetarian dish is perfect for those busy nights! It’s packed with flavor and comes together in less than 30 minutes. Switch up the beans or add more chili if you love a bit of heat. Serve it as a comforting meal with a slice of crisp sourdough or enjoy it on its own for a hearty vegetarian option.
1 tbsp olive oil
1 red onion, sliced
2 garlic cloves
2 tsp smoked paprika
1 tsp chili flakes
1 tsp oregano
1 jar roasted red peppers, sliced
2 tins (800g) chopped tomatoes
1 jar (600g) butter beans
1 packet (225g) halloumi
2 large handfuls fresh spinach
Directions:
1. Preheat oven to 180°C.
2. Heat olive oil in a large, oven-safe pan over medium heat. Cook onion for 8 minutes.
3. Add garlic, paprika, oregano, chili flakes, peppers, and tomatoes. Let it bubble for a few minutes.
4. Add butter beans and halloumi, then bake for 20 minutes.
5. Stir in spinach to wilt before serving.
