1 red onion, cut into wedges
500g butternut squash, frozen cubes
3 garlic cloves, crushed
2 tsp olive oil
1 tsp paprika
300g orzo
700ml vegetable stock
250g cherry tomatoes
2 tbsp pesto
225g halloumi, cubed
Salt & pepper

Directions:
1. Preheat oven to 200°C.
2. Toss onion, squash, and garlic in oil, paprika, salt, and pepper. Bake for 30 mins.
3. Add orzo, stock, tomatoes, pesto. Top with halloumi. Bake 15-25 mins.
