Butter Halloumi Curry is a vegetarian twist on the classic Butter Chicken, using halloumi to create a rich and indulgent dish. 2 onions
5 cloves garlic
2-inch piece of ginger
6 tbsp tomato puree
1 tbsp garam masala
1/2 tsp chilli powder
1 bay leaf
100 ml double cream
450 g halloumi
60 g butter
Directions:
1. Preheat oven to 220°C.
2. Cut halloumi into 1-inch pieces, bake for 15-20 min until golden.
3. Cook onions, garlic, and ginger in oil until caramelized.
4. Add spices, puree, and water. Simmer, then blend into a smooth sauce.
5. Add baked halloumi and butter. Season and serve.
