1 Tbsp Oil
1/2 Yellow Onion (diced)
2 Garlic Cloves (minced)
200g Diced Tomatoes (canned)
1/2 tsp Salt
1/2 tsp Ground Cumin
1/2 tsp Paprika
1/2 tsp Turmeric
1/4 tsp Black Pepper
4 Halloumi Slices
1 Large Egg

Directions:
1. Preheat oven to 200°C. Heat oil in an oven-proof skillet over medium-low heat. Cook onion until soft.
2. Add garlic, spices, and tomatoes. Simmer for 10 mins.
3. Grill halloumi until charred. Scatter over tomatoes.
4. Crack egg into skillet. Bake for 5 mins or until egg is set.
5. Serve with grilled bread.
