1 cup orzo
1 can (15 oz) chickpeas, drained and rinsed
1 cup heavy cream
1 cup vegetable broth
1/2 cup sun-dried tomatoes, chopped
2 cups fresh spinach
3 cloves garlic, minced
1/4 cup fresh basil, chopped
1 tbsp olive oil
Salt and pepper to taste
Directions:
1. In a pot, heat olive oil over medium heat and sauté garlic until fragrant.
2. Add sun-dried tomatoes, chickpeas, orzo, cream, and broth. Simmer for 15 minutes.
3. Stir in spinach and basil, cook until spinach wilts.
4. Season with salt and pepper.
