Juicy Pineapple Heaven Cake
Ingredients:
– 2 large eggs
– 1 cup crushed pineapple, drained
– 1/2 cup unsalted butter, softened
– 1/2 tsp salt
– 1 1/2 cups all-purpose flour
– 1 tsp baking powder
– 1 cup granulated sugar
– 1 tsp vanilla extract
– 1/2 cup sour cream
– 2 tbsp pineapple juice
– 1/2 cup powdered sugar
Instructions:
1. Preheat your oven to 350°F (175°C). Take a moment to grease and flour a loaf pan to ensure your cake doesn’t stick.
2. In a medium bowl, combine the flour, baking powder, and salt; whisk them together until well blended.
3. In a larger bowl, use an electric mixer to beat the softened butter and granulated sugar together until you achieve a light and fluffy mixture.
4. Add the eggs one by one to the butter mixture, making sure to beat well after each addition. Pour in the vanilla extract and give it a good mix.
5. Gradually add the dry flour mixture to the butter mixture, alternating with the sour cream. Start and finish with the flour mixture, ensuring you mix until just combined—do not overmix!
6. Gently fold in the crushed pineapple until evenly distributed throughout the batter.
7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula for an even surface.
8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
9. Once baked, let the cake cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
10. For the glaze, whisk together the powdered sugar and pineapple juice in a small bowl until smooth. Drizzle it generously over your cooled cake to finish.
